Easy Monday Dinner

Hi guys! Coming at you with an easy quick Monday dinner that we just had.. so I am currently very full but also very excited to share this easy meal with you! Tonight, we had a lot of wedding planning, financials, and all that jazz to go over so it was so nice to have a YUMMY meal that didn’t take all day to cook. I made some TBLTs (Turkey Bacon Lettuce & Tomato) with some homemade Mac N Cheese with stewed Tomatoes! MMMM!

So I will first start with the stewed tomatoes because this was the easiest.. I normally make these homemade but today I went with the canned stewed tomatoes and spiced it up (just a tad). I warmed the tomatoes on the oven and then once bubbling hot – I threw in a tablespoon of flour to get a thicker consistency. After that, I then added a teaspoon of sugar just to get a sweeter taste… this was by far the easiest part of the whole dish (because I used a can…) But ok… next with my homemade Mac N Cheese recipe! I love experimenting with different cheeses so I never have the same outcome everytime. So here we go with this easy recipe…

  • 1 box of elbow macaroni pasta
  • 2 cups of Milk (I used whole)
  • 2 tablespoons of unsalted butter
  • 2 tablespoons of flour
  • 1 block (OR MORE) of cheddar cheese – Today, I used a block of sharp Cheddar and a half block of Pepper Jack with a handful of shredded Mozzerella
  • Salt
  • Pepper
  1. Preheat the oven to 400 degrees
  2. Cook pasta according to directions on the box
  3. Heat Milk in microwave for a minute or so – it needs to be warm!
  4. Melt butter over the oven. Once melted slowly put flour into the melted butter (WHISKING) so it creates a RUE.
  5. Once the rue is a smooth consistency, then slowly pour in your warm milk continuing to whisk it while pouring.
  6. After that is starting to look fully mixed, add in all your cheese and allow it to melt while whisking.
  7. Once pasta is cooked, dump into a 9×13 greased pan (I used non-stick spray)
  8. Then once all the cheese is melted – pour it over the pasta in the pan and then mix so all noodles are evenly covered.
  9. Then add salt & peper to taste to the top
  10. Then bake in over for 20 miutes!
I added a cheese blend to the top as well! Sometimes you can add bread crumbs, crackers, bacon, etc!

After this cooked for 20 minutes, then I started my Turkey Bacon in the oven. I just lined a cookie sheet with tin foil then placed Bacon on top. I put the oven on broil and moved the rack to the top so the Bacon was closer for a nice CRUNCHY piece of Bacon. It really depends on your oven for how long you cook Bacon. Mine took about 8 minutes for it to turn crispy from the broil cooking method. I would recommend keeping the oven light on so you can keep an eye on it because cooking it this way could turn to pieecs of burnt Bacon quick!

I then just cut up some tomatoes and letuce to complete off my TBLT sandwiches… I used a beef tomato and some Romaine lettuce!

So that is all we had tonight for dinner. We ate in about ten minutes and my soon to be husband had two plates which always makes me feel good! I never know what to make on nights we have a lot to get done and feel bad not making dinner for him! Any other quick and easy dinner recipes you can send my way so I don’t always have to rely on a good old BLT?!

Homemade Guac

FIESTA FRIDAY is finally here! Nothing better than ending the LONG work week with some homemade Guac, some tortillas, and a nice Margarita!

Let me just tell you this… my Guac is different every time I make it. So I will just tell you guys what I did this time around…

2-3 ripe Avocados 🥑

Half of a White Onion

1 Jalapeño – I like the seeds in it and all 🌶

Handful of Grape Tomatoes 🍅

Teaspoon of minced Garlic

One FULL juice of a Lime

A pinch of Salt and Pepper

So to be truthfully honest, I just threw this all into a bowl and smushed it together…nothing pretty. I like my Guac a little more chunky too as you can tell above with almost whole tomatoes in the mix.

In our household, we (more so me) can eat Guacamole everyday or even a dip with a nice crunchy chip. If I go out to a restaurant, you better bet I am getting extra Guac on the side (even if its an extra $4.00). Anyways, we love experiencing different types of Guacamole. Sometimes we throw some Pineapple, Mango, goat cheese or even herbs like Basil and Cilantro in it to spice it up!

Banana Bread

Quick Easy Banana Bread
  • Three to Four ripe bananas
  • 1/3 cup butter
  • 1 cup sugar (I reduced it to about 3/4 cups)
  • 1 egg
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 1 1/2 cup of all-purpose flour
  • Pinch of salt (I used Pink Himalayan Salt)

Alright – So this is what I did and it turned out AMAZING….

Preheat the oven to 350 degrees with the racks set on the middle option! I used a 4×8 inch loaf pan and buttered it before I started preparing the mixture!

In a big mixing bowl, I melted the butter first and then I added the ripe, unpeeled (OBVIOUSLY) bananas. I smashed up the bananas in the butter with a wooden spoon. I added the sugar, baking soda, and flour into the mixture. Then in a small dish, I beat the egg and vanilla together before adding it to the big mixing bowl. I threw a pinch of salt in (more than a pinch)… then mixed all the ingredients together until it was a “lumpy” wet mixture.

I poured the mixture into the loaf pan and threw it into the oven for an hourish… (I added 5 minutes after an hour) To check to see if it was done: I put a knife into the center to make sure when I pulled it out, it came out clean! Once it was done, I allowed the bread to FULLY cool until I removed it from pan.

To do next time: I feel like we always have left over Bananas that turn soft way too quick! So next time I try this recipe… I might include some chocolate chips, nuts, or maybe even some cinnamon!

How we have been munching on it: Honestly, this is very good just plain! But if you want to spice it up a bit, we really like warming it up in the microwave then throwing a scoop of Vanilla ice cream in it. Or even throwing some butter over it – so unhealthy I know.. but a great way to utilize your left over soft bananas!
